made pumpkin bread the other day - to mark the start of fall - and have been enjoying it all week. it's one of the rare things boo eats too - does my heart good to see some vitamin A making it into him. here's the recipe i love: http://www.epicurious.com/recipes/food/views/SPICED-PUMPKIN-BREAD-840
i made these modifications:
- 2 cups of sugar instead of 3 (a little less than 2 is still pretty good; a touch more than 2 guarantees the kids will love it)
- 1/2cup applesauce replaces 1/2 cup of the oil (next time i might try replacing all the oil)
- a smattering of wheat germ and wheat flour (probably about 1/3 cup each) replacing equal amount of all-purpose flour
- added perhaps 1/4 cup ground almonds (boo usually likes almonds, but picks it out of bread)
in the past i've also doubled the spices, which makes it really tasty, but perhaps a bit much for the kids.
i have also seen a recipe that replaces half the oil with pumpkin, so the amounts are as follows: 1/2 cup oil, 1.5 cans pumpkin. this only works if you have something else to do with the other 1/2 can, or if you want to make a whole ton of bread and double the whole recipe.
ETA: it's a little eerie, but i apparently just answered the ravelry swap question#3 without knowing i did! ("what foods mean fall to you?")
